Strawberry-Peach White Sangria

Kick off your summer parties with this cool and refreshing, colorful and fruity strawberry and peach sangria
Feeling like summer is creeping up on you? I surely do. 
I can't believe that there's only a couple of weeks left of school for my kids. And my older boy is graduating from elementary school. Soon enough, my sweet and cute baby will be in the same school as those  pimply faced, proto-mustached teenage boys. Scary!!! 
I should stop mulling over this now, before I start hyperventilating and getting all teary eyed.
So let's focus on my fun summer plans. The long days at the beach, the lazy and relaxing afternoon by the pool, the breezy ocean sunsets... And let's not forget the delicious, boozy cocktails to refresh and lighten up the summer parties. Vodka-spiked drinks definitely help with my gloomy moods :)



Pretty, right?!! This is one of my favorite cocktails. Summery, colorful, fruity and kinda boozy. I use the classic green apples, in combination with ripe (but not too soft) nectarines and sweet strawberries. Now it's the perfect season to find cheap, really delicious and juicy peaches and berries at the market. And because I like sweet and bubbly white wine more than your classic red, I made this sangria with Italian Prosecco ... and a bit vodka, for an extra kick.
This fruity drink takes no time to put together, but it tastes a lot better if you give it at least 4 to 6 hours in the refrigerator. So that the fruit releases some of its juice, and the flavors blend together to make a perfectly delicious cocktail.
Note, if you make this sangria one day in advance, I suggest adding the strawberries just a couple of hours before serving, or they might get a little too mushy.
Also, you don't need to buy expensive wine for this. I used a 7$ bottle of Italian prosecco wine from Trader's Joe. Bubbly and dry. So good with the fruits and the vodka.

Ingredients: to make around 12 cups, serving
  • 2 nectarines
  • 2 green apple
  • 1 lb (450 gr) of strawberries
  • 1/2 cup (100 gr) of sugar
  • 2 lemons
  • 1 orange
  • 1 bottle (750 ml) of prosecco wine (or your favorite sparkling)
  • 1/2 cup (125 ml) of vodka
  • 2 cups (500 ml) of sparkling water (or soda) (optional)
Preparation time: 15 minutes, plus at least 4 hours chilling
Directions:
1. Wash and cut in cubes the apples, the nectarines and the strawberries.
2. In a large enough pitcher, add the cut up fruit with half cup of sugar.
3. Squeeze one lemon and one orange. Pass the juice through a sieve, and mix with the fruit.

4. Cut the lemon in thin slices, cut in half, and mix in with the rest of the fruit.

5.Add the vodka and the prosecco wine. Stir to combine.

Cover and refrigerate for at least 4 hours so that all the flavors combine. If you make this one day before, I suggest adding the strawberries only a couple of hours before serving.
Add the sparkling water if you are using it (for a less boozy drink) and serve with ice, if you wish.
