Father's Day Brunch

 Here are some fun and delicious recipe ideas to celebrate the Dads in your life

Father's Day is this weekend. Let's celebrate with something special, made with love for the amazing dad in your life. 

First of all, let’s take a look at this ultimate breakfast egg sandwich (similar to the Tik Tok egg sandwich that went viral a few months ago). 

It has it all: the melty cheese, the fresh veggies, and the scrumptious eggs. All squooshed between two slices of tasty bread. So messy and oh-so good. It's super easy to prepare, it only requires one frying pan. 

Here are some things to keep in mind when attempting this recipe.

- Find the right size pan - you need one that is big enough to fit the two slices of bread. But not much bigger, or you will need a lot more eggs to cover the bottom.

- Beat the eggs in a bowl with all the seasoning you like (I just used salt and pepper). Depending again on the size of your pan you can use two or three large eggs. I think 3 is the best choice! 

- Make sure to dip both sides of the bread in the eggs, so when you flip it, it will look delicious on the back side too. And let the egg set as much as possible, so turning the sandwich over will be easier ... it's the only hard step in the process. If by any chance it breaks when turning ... no problem. You will fold the eggs in, so no one will notice!

Ultimate breakfast egg sandwich, with melty cheese, fresh veggies, and scrumptious eggs.

Ingredients

  • 1/2 tablespoon butter
  • 2 slices cheese
  • 3 eggs
  • salt and pepper to taste
  • 2 slices bread
  • 1 small tomato 
  • 1/2 avocado
  • 1 small lettuce leaf

Instructions

  1. In a bowl, beat the eggs with salt and pepper.
  2. Melt the butter in a large enough non-stick frying pan over medium heat.
  3. Place the the slices of cheese, pour the eggs on top. 
  4. Dip one side of the bread slices in the egg, flip and place on top of the cheese slices. 
  5. Let the eggs set. With a large spatula flip the egg/bread to cook the other side.
  6. Place tomato, avocado and lettuce on top of the bread
  7. Fold in the sides of the frittata on top of bread.
  8. And fold in half, making into a sandwich. 
  9. Serve immediately.
