Ham & Cheese, Roasted Potato Tart

Today I present you with this easy and deliciously crispy tart topped with ham, cheese and tasty, oven-roasted rosemary potatoes.


This ham and cheese, potato tart is really simple to make and the perfect light and scrumptious meal. It can be served as an appetizer cut in small squares, or a light and fun idea for brunch, lunch or dinner.

Now let's talk tart for a moment.

In my recipe today I use yellow potatoes, soft and subtly sweet, rich and buttery, and so flavorful when baked to perfection with a sprinkle of fresh rosemary and a drizzle of extra virgin olive oil.

For this recipe it's important to evenly cut the potatoes to ensure they all cook through at the same time. You can cut the potatoes by hand or even better, using a mandolin (like I did), or a food processor with a slicer attachment.

Slice the potatoes to about 2 mm in thickness. Toss with olive oil, salt, pepper and chopped rosemary. Layer on a baking sheet in a single layer and bake.

Once the potatoes are mostly tender, assemble the tart: unroll the puff pastry on a baking sheet, top with cheese and ham and a layer of  potatoes.


This potato tart is so easy to customize. You can leave the ham out for a vegetarian alternative. Switch up the fontina cheese with your favorite.  Add your favorite veggies (sautéed spinach is a great addition!), or some roasted garlic.  Just let your imagination (or what's in your fridge) guide you!
