Coconut Pralines





This week is my birthday, so I'm feeling happy and definitely in the mood for sweets!
I started the week with a soft and moist apple cake, and for today I have another yummy dessert: coconut pralines made with ricotta cheese, cocoa and, of course, coconut flakes.
I brought some of these treats to my tennis group yesterday, and it was a huge success. So I posted this recipe as soon as possible, for all the friends that asked me.
These praline are incredibly easy and fast to make. They are the perfect solution for a last-minute dessert. No baking is required, and your kids will definitely have fun helping too!
Just a warning though, as we say in Italian,  una tira l'altra! I don't know if there is an comparable expression in English. It means "one leads to another" or to the next. So you just can't stop after eating only one. Simply irresistible!

Ingredients: to make about 24 pralines
  • 8 oz of whole milk ricotta cheese
  • 2/3 cup of sugar
  • 1/2 cup of cocoa powder, unsweetened
  • 8 tea cookies, like petit beurre or similar, about 2.5 oz. (I haven't tried but plain graham crackers should work too!)
  • about 1.5 cups of coconut flakes
Preparation time: 20 minutes, plus one or more hours of refrigeration

Directions:
Step 1: Place the ricotta, sugar and cocoa power in a bowl and mix well together.
Step 2: Crumble the cookies. I did this by placing them in a ziplock bag and crushing with a cup (here you can use a rolling pin, or whatever comes handy!).
Step 3: Add the crumbled cookies to the ricotta mixture. Mix well again.
Step 4: Take a small spoonful of mixture and drop it on the coconut flakes. Roll it around, until round in shape and all covered with coconut. Continue with the rest. You should get about 24 pralines.
Step 5: Place on parchment paper and refrigerate for at least one hour.

Simply irresistible. Enjoy!!
