Pasta with Shrimps and Zucchini






Are you looking for a simple, delicious and all-in-one meal, that is ready in 30 minutes or less?
Here is a great idea that will make a pasta dish into a special weeknight dinner with very little effort!
This pasta featuring shrimps and zucchini is a classic Italian dish, that puts together two quite different, fresh ingredients, with aroma and flavor that combine perfectly.
For the best result, find small, organic zucchini and super fresh shrimps. And as I might have said before, don't top your seafood pasta with Parmesan cheese. I know, I love freshly grated Parmesan  with most of my pastas, but this is one exception! What I do like to sprinkle on top of this pasta with shrimps an zucchini is chopped, fresh Italian parsley. You will love it!


Ingredients serving 4 people:
  • half onion
  • 1 hot pepper
  • 3 tablespoons of extra virgin olive oil
  • 4 small zucchini
  • 1 lb of fresh shrimps 
  • 1 tablespoon of fresh Italian parsley, chopped
  • salt
  • 12 oz of penne or other shape pasta

Preparation time: 30 minutes

Directions:

Step 1: In a large pan, saute' over medium heat the chopped onion, the hot pepper and the olive oil, for about 4 to 5 minutes.
Step 2: Add the cubed zucchini, and cook for about 5-6 minutes over medium-high heat.
Step 3: Bring a large pot of salted water to a boil. And cook the pasta when the water boils.

Step 4: Cut most of the shrimps in pieces, leaving a handful of shrimps uncut. Add the shrimps to the zucchini and season with salt. Cook for a couple of minute at high-medium heat. Lower the flame and cook for another 8 minutes, or until the pasta is ready.
Step 5: Add the chopped parsley to the sauce. Drain the pasta, and toss with the zucchini and shrimps. Serve hot!
