What an absolute mess! Has anyone other than Manuela been able to roll these? The apples break or pop out. Nothing about this looks good. Maybe it will taste good but I have never had such a failure in baking.

Slice your apples thinner, maybe?
DeleteMaybe slice the apple more thinly, or cook them a bit longer. They should be bendable.

DeleteI made these exactly as stated in the recipe and they came out beautifully. However, even though I cooked them longer the inside part of the dough was very soft, not flaky at all. I would love to make these again and try them as a savory dish with pear slices and gorgonzola. Any advice on how to get a more flaky inside? Thank you!
ReplyDeleteHi! In my roses also the middle part was not as puffed as the outer part of the pastry. I think it's probably the moist of the apples and the butter in the crust. One reader wrote me that she covered the roses for the first 30 minutes, and baked it uncovered for the rest. I haven't tried it yet, so I'm not sure it would fix the problem (maybe it keeps more moist inside?!?) But I do want to try it out. Thank you!!

DeleteLove to make different deserts I tried these tonight for a party I had to go to and they were a hit Once I got the hang of it it was so easy I also used some cinnamon sugar on top and it added just a bit more sweetness they were a hit at the party tank you for posting there apple rose desert

DeleteI had to cook mine much longer but they still turned out beautiful. They were an absolute crowd pleaser. I did have quite a few issues with baking them, though. It was really messy, the apricot jam spilled over the top and left a burnt sugar crust the metal during baking. The roses looked and tasted fine but nearly all of them lost the outer ring of the pastry as I had to cut them out of the forms.
ReplyDeleteHave you ever made them in a metal tin? Next time I'll use less jam, a silicone form and I'll roll out the pastry thinner. Thanks for the recipe though.
The apples broke and it was a complete mess, too.
