Air-Fried Chicken Cordon Bleu

Guilt-free, scrumptious AIR-FRIED chicken cordon bleu
Crispy on the outside, cheesy and tasty on the inside

Here is a simple lunch or dinner idea that I'm sure your family would enjoy as mush as mine. These chicken cordon bleu are a healthy twist to the classic recipe. Still, super crispy on the outside, with a melty and tasty cheese and ham center.  
First of all, for this recipe I'm using ground chicken breast rather than regular, thin-cut meat (generally sliced in half and stuffed). I find the ground meat to be more versatile and fun to use. You can shape it as you wish, size it based on your mozzarella and ham slices, or make it as big or as small as you desire depending on how you'd like to serve it (as appetizer or main dish!). 

Second of all, to make things a little healthier, rather than frying these chicken cordon bleu per tradition, today I cooked them in my Toshiba 4-in-1 oven  using the air fry option. What you need to do is preheat the oven to 400F (press "air fry", turn the start knob till it reaches 400F, and press "start" twice (once to confirm the temperature, the second time to make it start).  
The oven will beep when it reaches the temperature. Place the oven safe dish with the chicken inside, select 400F again, press the start button once, turn the know to 20 minutes and press again. 

Remember to turn the chicken half way through so it will be perfectly crispy on both sides. 

Serve next to your favorite salad, and/or some air fried fries (I used sweet potatoes fries this time!). So good!

Ingredients

  • 1lb ground chicken breast
  • 1/4 cup grated Parmesan cheese
  • 3 eggs, divided
  • Salt and pepper to taste
  • 1 1/4 cups breadcrumbs, divided
  • 6 slices of Mozzarella cheese (or your favorite)
  • 3 large slices of ham, divided in half
  • salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the air-fry oven to 400F.
  2. In a large bowl, combine the ground chicken with the Parmesan cheese, 1 egg, salt and pepper to taste and 1/4 cup breadcrumbs. Mix well. If too sticky, add a little more breadcrumbs.
  3. Take one spoonful of the mixture and make it into a flat round patty. Top with one slice of mozzarella and one piece of ham (about 1/2 slice). Top with another spoonful of chicken mixture and seal the edges.
  4. Dip in breadcrumbs, covering all sides.
  5. In a deep dish, beat two eggs with a pinch of salt. Dip the chicken cordon bleu in the eggs and then again in breadcrumbs.
  6. Place on a oven safe dish. Drizzle lightly with olive oil.
  7. Air fry at 400F for 10 minutes. Turn and air fry for another 10 to 15 minutes or until deep golden and cooked through.
