Savory Potato Pie with Ham and Fontina Cheese

Flaky, hearty and scrumptious puff pastry pie with potatoes, ham cubes and cheese
Easy, quick and delicious dinner idea!

Today I present you with an easy and savory puff pastry pie filled with delicious potatoes, ham, and fontina cheese.

This potato pie is cozy and comforting. Perfect for lazy and chilly nights.

This potato tart is really simple to make and the perfect light and scrumptious meal.

It has a flaky puff pastry on the sides and bottoms, and a satisfying middle bursting with fontina cheese, golden potatoes and yummy ham.

It can be served as an appetizer, or a light and fun idea for brunch, lunch or dinner.

A few things to keep in mind when making this recipe:

Potatoes: I use one large potatoes, but you can also make it two medium-large potatoes.

Peel the potato and cut in (similar size) cubes.

Simmer in salted boiling water for about 4 or 5 minutes, or until mostly soft.

This step is needed to make sure the potatoes turn out perfectly soft and cooked through at the end.

Cheese: I use fontina cheese, which has a delicate flavor and melts really well.

But you can substitute with your favorite cheese, or use a combination of two or three cheeses.

Good options are mozzarella (well drained if fresh), gruyere, scamorza, provolone, white cheddar ... Or your favorite!

Ham: I use a one thick slice of deli ham and cut it in cubes.

But you could also use ham slices and layer them at the bottom of the pie.

If you want to make this a vegetarian pie, you can skip the ham all -together or substitute for another veggie.

Puff pastry: For this recipe I use store-bought puff pastry, which is one of those things I like to have in my refrigerator.

It's quick. It's easy. It's mess-free. And it's consistently delicious.

You will need a 10 or 11 -inch round sheet of puff pastry. If the one you buy is rectangular, simply cut it by placing the pie dish, upside down over the puff pastry, and leaving an edge of about 1 inch all around.

Place the puff pastry inside the dish (you can keep the parchment paper or make sure to grease the pie dish with butter or spray).  Prick the bottom of the pie crust with a fork.

Add the ham, the cheese and the cooked potatoes (well drained). Toss to mix if needed and sprinkle with parmesan cheese. Fold in the extra edge and bake until golden and cheesy!

Buon appetito!
