Baked Eggs in Tomato Sauce with Ricotta and Spinach

Do you have a favorite brunch recipe you always use to make your weekend special?!? Here is one that I love and would like to share with you today. Honestly, I make this for a fun lunch next to a big green salad or any weeknight I want to change things up. 
These irresistible baked eggs in tomato sauce are simply perfect for any occasion.
This recipe is super simple. All you will have to do is saute chopped onion, with some red pepper flakes and dried oregano, add the crushed tomatoes and chopped baby spinach, and simmer until the sauce thickens a little. 
Then, the delicious part, crack the eggs over the sauce, sprinkle with spoonfuls of ricotta, and bake until the egg whites are set and the yolks are still runny.

The finishing touch.... a crusty grilled slice of warm bread to go with your eggs!

What's not to love about this dish?! It has perfectly baked, soft eggs, wilted fresh spinach, over a flavorful tomato sauce, all covered in ricotta cheesy top. 
You can bake these in individual oven-safe cute bowls, or bake in a bigger pan or Dutch oven like I did.  
This recipe is quick and super easy to make in a few simple steps.
