Soft, Moist and Easy-to-Make Vanilla and Chocolate Marble Loaf Cake

Let's kick start the day with a thick slice of this soft and moist vanilla + chocolate marble loaf

  

Today I'd like to share with you the recipe for this easy to whip up, quick (ready in less than 1 hour), extra soft and perfectly moist chocolate and vanilla marble cake.

This sweet loaf can be dressed up with some fresh fruit on the side, ice-cream, whipped cream, or spread with your favorite jam. 

Or not. You decide. 

If you should know what happened to a big chunk of this cake... I devoured a few slices for breakfast with my coffee. More specifically, I dunked it in my foamy, steamy hot Italian cappuccino. The perfect way to jump start my day!

This loaf is made with  no butter, but Greek yogurt (and some vegetable oil)  for an extra moist and soft result. 

You can use plain or vanilla yogurt for this recipe. And if you prefer, you can substitute the yogurt with the same amount of sour cream (the taste will be slightly different)

To obtain the marble effect, simply add the cocoa powder to half the batter once you're done mixing. 

You can scoop the two batter with an ice cream scoop or a simple spoon. Or you can use piping bag for a fancier result. Just make sure to randomly spoon it and alternate the two colors. At the end you can use a knife to swirl the two together with a zig zag motion along the pan. As simple as that!

For the best results, remember to not over-mix the batter once you add the dry ingredients to the wet. And do not over-bake the loaf or it will quickly dry up. So make sure to keep an eye to the timer, and set for 5 minutes less and keep it check! Always test with a toothpick at the end to make sure it comes out clean when inserted in the middle of the loaf.

Ingredients

  • 3 large eggs
  • 3/4 cup (150 gr) sugar
  • 8 oz (225 gr) plain Greek yogurt
  • 1/2 cup (120 ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups (250 gr) all-purpose flour
  • 1 pinch salt
  • 2 teaspoons baking powder
  • 2 tablespoons (20 gr) unsweetened cocoa powder

Instructions

  1. Pre-heat the oven to 375F (190C).
  2. Line a 9-inch loaf pan with parchment paper
  3. In a large bowl, beat the eggs with the sugar until light and foamy.
  4. Add the yogurt, oil and vanilla extract. Beat well.
  5. Sift the flour, salt and baking powder into the bowl. Beat at low speed, or mix with a whisk until just combined.
  6. Pour half of the batter into a different bowl. Sift the cocoa powder to half of the batter and mix until combined.
  7. Spoon some of the vanilla batter and some of the chocolate into the loaf pan, alternating the two colors. To add a marble effect, dip a non-pointy knife all the way to the bottom (careful not to scratch the pan), and do a zigzag movement along the pan to mix.
  8. Bake at 375F for 20 minutes. Lower the temperature without opening the oven to 350F and bake for other 20 minutes or until a toothpick comes out clean.
  9. Wait for the loaf to cool a couple of minutes before removing from the pan and slicing. Enjoy!
