The one-pan method keeps prep and cleanup easy, while the creamy mushroom sauce feels rich and satisfying without being heavy. It’s versatile, family-friendly, and made with everyday ingredients you may already have on hand — the perfect balance between cozy comfort food and classic Italian cooking.

Tips for the Best Creamy Mushroom Chicken

For the best flavor, let the chicken brown היט before removing it from the pan — those golden bits create the base of the sauce. Use fresh mushrooms and cook them until their moisture evaporates so they caramelize instead of steaming. If using cream, add it at the end over low heat to keep the sauce silky. And don’t skip the fresh parsley finish — it brightens the dish and adds that final Italian touch.

Ingredients

  • 6 chicken thighs or drumsticks
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 8 oz (225 g) fresh mushrooms, sliced
  • 2 garlic cloves, minced
  • Fresh thyme sprigs
  • 3 tablespoons all-purpose flour
  • 1/2 cup (120 ml) dry white wine
  • 2 cups (480 ml) chicken broth
  • 1/2 cup (120 ml) heavy cream (optional)
  • Fresh parsley, chopped, for serving
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Pat the chicken dry, season well with salt and pepper, and brown on all sides (about 5 minutes per side). Remove the chicken from the pan and set aside.
  2. Lower heat to medium. Add the butter to the same pan. Add onion and cook until soft and translucent (about 3–4 minutes).
  3. Add mushrooms, garlic and thyme. Season with salt and pepper and sauté until golden and their moisture evaporates, about 5 minutes.
  4. Sprinkle the flour over the mushrooms and stir for 1 minute to cook the raw flour taste.
  5. Pour in the white wine and stir until smooth, scraping the browned bits from the pan. Let simmer for about 2 minutes. Gradually add the chicken broth, stirring to avoid lumps.
  6. Return the chicken to the pan. Cover and simmer gently for 15 minutes covered, then 10 minutes uncovered until the sauce thickens and the chicken is tender and fully cooked inside.
  7. Reduce heat to low and stir in the heavy cream. Simmer for 2–3 minutes. Adjust salt and pepper if needed.
  8. Sprinkle with fresh parsley and serve with crusty bread, mashed potatoes, or creamy polenta.
