Ingredients
- 16 oz (450 g) cherry tomatoes
- 1 large eggplant
- 2 garlic cloves, crushed
- 3 tablespoons olive oil
- Red pepper flakes (optional)
- Salt and pepper, to taste
- 14 oz (400 g) pasta (trafilata al bronzo or use your favorite short pasta)
- 2–3 oz (60–80 g) Parmesan cheese, grated
- 2 burrata balls (8 oz / 225 g total)
- Fresh basil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the cherry tomatoes in half. Slice the eggplant into thin rounds, then into half strips.
- Arrange the tomatoes and eggplant on a baking pan. Add the crushed garlic, drizzle with olive oil, season with salt, pepper, and red pepper flakes (if using), then toss to coat.
- Roast for 30–45 minutes, until the vegetables are soft, slightly caramelized, and fragrant. Toss halfway.
- When the veggies are almost ready, cook the pasta in salted boiling water until al dente. Reserve some pasta water, then drain.
- Remove the garlic if desired. Transfer half of the roasted vegetables to a blender with fresh basil and a splash of pasta water. Blend until smooth and saucy.
- Toss the pasta with the remaining roasted vegetables, the blended sauce, and grated Parmesan. Add more pasta water as needed to loosen and coat everything beautifully.
- Serve topped with torn burrata, extra fresh basil, and a drizzle of olive oil. Buon appetito!
