Ingredients

  • 7 oz (200 g) dark chocolate (about 60–70%)
  • 4 oz (115 g) unsalted butter, cubed
  • 3/4 cup (150 g) granulated sugar, divided
  • 4 large eggs, separated
  • 1/4 cup (40 g) cornstarch (or all-purpose flour)
  • 1/4 teaspoon flaky sea salt
  • Powdered sugar, for dusting
  • Whipped cream (optional), for serving

Instructions

  1. Preheat the oven to 350°F (180°C). Line the bottom and butter the sides of an 8- or 9-inch (20–23 cm) springform pan.
  2. Finely chop the chocolate and place it in a heatproof bowl set over a saucepan of simmering water. Stir until melted and smooth.
  3. When the chocolate is fully melted, remove it from the heat and add the cubed butter. Stir until melted and combined into a smooth, glossy mixture. Let it cool slightly.
  4. Separate the egg yolks and whites into two large bowls.
  5. Beat the egg whites, then add about half of the sugar and continue beating until stiff, glossy peaks form. Set aside.
  6. Add the remaining sugar to the egg yolks and beat until thick, pale, and creamy. Slowly pour the cooled chocolate–butter mixture into the yolk mixture while beating at low speed until fully blended. Mix in the cornstarch and salt, folding gently with a spatula.
  7. Add about one-third of the whipped egg whites to the chocolate batter and stir to lighten the mixture. Then gently fold in the remaining whites in two more additions, moving the spatula from bottom to top to keep the batter airy.
  8. Pour the batter into the prepared pan and smooth the top. Bake for about 25 minutes, until the top forms a delicate crust but the center remains slightly soft.
  9. Let the cake cool completely in the pan before removing it. Dust generously with powdered sugar just before serving. Serve it plain, or with a dollop of whipped cream or a scoop of gelato for an extra treat.
