Ingredients

  • 4 oz (115 g) unsalted butter, melted
  • 6 oz (170 g) blackberries
  • 6 oz (170 g) blueberries
  • 6 oz (170 g) raspberries
  • 1/2 cup (100 g) sugar, plus 2 tablespoons for the top
  • Zest of 2 lemons, divided
  • 1 1/2 cups (180 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (240 ml ) milk

Instructions

  1. Preheat oven to 350°F (175°C). Using some of the melted butter, generously grease a 10-inch round pan. Sprinkle about half of the berries evenly on the bottom of the pan.
  2. In a large mixing bowl, combine the sugar and the zest of one lemon. Rub the zest into the sugar with a spatula or your fingers to release its flavor. Add the flour, baking powder, and salt, and mix to combine. Stir in the milk and remaining melted butter until just combined.
  3. Pour the batter over the berries in the pan, gently spreading it evenly. Sprinkle the remaining berries on top of the batter.
  4. In a small bowl, rub the remaining lemon zest with 2 tablespoons sugar and sprinkle evenly on top (optional).
  5. Bake for about 45 minutes, until golden on top and bubbling around the edges.
  6. Let cool slightly and if you’d like, serve warm with vanilla ice cream.
