
Easy Recipe for Dark Chocolate Lava Cake

Here it is! The perfect indulgent and oh-so luscious Valentine’s Day dessert for the chocolate lovers out there.
After all, nothing says love like chocolate. Especially when it comes in the form of a mouthwatering, cute little cake with a softy-melty center.

Dangerous, I’m telling you!
Here are a few recommendation when making this cake:
First of all, you will need good quality chocolate for the recipe. I recommend a 70% or more cocoa. I would stay away if possible from baking chocolate or chocolate chips. But go for a better quality , good brand.
You can use any oven safe bowl. Mine are 8oz each, and the recipe makes only 2. But you can also use smaller size, and divide the batter into what you have. Just make sure to reduce the baking time for smaller size cake.

You can decorate the molten cake with whipped cream, ice-cream. Or simple powdered sugar and berries on the side!
Make sure to bake these right before serving. You can always store the ramekins with the chocolate inside in the refrigerator (for up to 24 hours) until you’re ready to bake. Add one minute in this case!

Ingredients
- 4 oz (115 gr) good quality dark chocolate (70% cocoa or more)
- 2 oz (55 gr) unsalted butter, plus more to grease the molds
- pinch sea salt
- 2 large eggs
- 1/2 cup powdered sugar, plus more to sprinkle on top
- 1 tablespoon unsweetened cocoa powder, plus more to dust the molds
- 1 tablespoon all-purpose flour
- whipped cream, ice-cream and/or berries for topping (optional)
Instructions
- Chop the dark chocolate in small pieces and place in a microwave-safe bowl with the butter cut in pieces. Microwave for 45 seconds, let rest for 1 minute, mix until melted and smooth. Add increments of 10 seconds if necessary. Let cool down.
- In a large bowl whisk the eggs with sea salt and powdered sugar until light and fluffy. Add the chocolate mixture and combine.
- Sift in the flour and cocoa powder. Gently fold and stir until combined.
- Grease throughly two ramekins with butter and sprinkle with cocoa powder. Remove the excess cocoa.
- Divide the batter into the ramekins. They should be filled to about 3/4 of the way.
- Right before serving, bake:
- Option 1: Regular oven at 400F for 13 to 15 minutes until the sides are set and the middle looks still a little soft.
- Option 2: Microwave at full power, covered with a wet towel for about 1 minutes and 45 seconds.
- Let the ramekins cool for one minute. Place a serving plate on top of the ramekin, flip, and remove the mold. Sprinkle with powdered sugar. Add your toppings if any and serve immediately.
- Note: make sure to bake these right before serving. Store the ramekins in the refrigerator until ready to bake and serve. Bake for one or two extra minutes when cold.
