Who says summer desserts are only for warm, sunny days?
I believe that the magic of a delicious fruity treats know no season.
That’s why I’m excited to share this recipe that allows you to savor the sweet taste of summer all year long, using a pantry staple – canned apricots. These apricot crumble bars are a perfect blend of fruity goodness and buttery crumbly perfection, offering a slice of summertime bliss in every bite.

These bars are a breeze to make, and the result is nothing short of spectacular.

Picture layers of luscious apricot filling sandwiched between a golden, crumbly crust and topping – it’s a combination of flavors and textures that you will want to bake all year long.

The month of February is National Canned Foods Month. So I’d like to show you how you can make a delicious summer dessert any time of the year using canned fruit! AND most importantly, I’d like to bring awareness to the sustainable benefits of steel food cans 🌎💙

Steel food cans are infinitely recyclable (they can be recycled over and over again with NO downgrading of material)
AND they have the highest recycling rate of any food packaging (at 58%)
AND they help reduce food waste, keep food fresh longer, and keep food ready for when you need it… with no waste or special care required .
Do you recycle your steel cans?! It’s super simple: just rinse and toss it into the recycling bin, including the top. It can have a HUGE impact on our precious planet.

Now let’s grab our aprons, preheat those ovens, and let’s get baking!

Total Time

1 hr, 15 min

Ingredients

  • 2 1/2 cups (300 gr) all-purpose flour
  • 1 cup (90 gr) old-fashioned rolled oats
  • ½ cup (100 gr) sugar
  • ¼ cup packed (30 gr) brown sugar
  • pinch of salt
  • 1 large egg
  • 6 oz (170 gr) unsalted butter, melted
  • 3 15oz cans (425 gr each) apricot halves (no sugar), cut in slices and well drained
  • 1 (or 2) tablespoon sugar
  • 1/4 teaspoon cinnamon
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375° F (190° C). Line an 8×8-inch or 9×9-inch baking pan with parchment paper.
  2. In a large mixing bowl, add the flour, oats, sugar, brown sugar, and salt, and mix to combine.
  3. Beat the egg in a small bowl and add to the dry ingredients. Add the melted butter (make sure it’s at room temperature). Mix until combined. You will get a coarse, crumbly mixture.
  4. Move a little over half the dough to the prepared lined pan. Press the dough lightly to the bottom of the pan, with the back of your spoon (or your hands). Bake at 375° F (190° C) for 10 minutes.
  5. In a small bowl add the apricots slices (well-drained from the can liquid), sugar cinnamon, and cornstarch. Mix to combine. Distribute the apricot slices evenly over the dough.
  6. Sprinkle the remaining dough on top of the apricots by pinching the dough between your fingers to create bigger crumble pieces. Bake for about 45 minutes until golden on top and at the edges.
  7. Allow to cool completely before cutting into squares. For a better cut, you can refrigerate for a couple of hours before cutting. If you don’t need perfectly neat squares, simply cut and enjoy! Store in the refrigerator for up to 4 days.
