Ingredients

  • 1 lb (450 g) thin asparagus, trimmed
  • 1 tablespoon extra virgin olive oil
  • ½ cup (120 g) crème fraîche
  • ½ cup (50 g) Gruyère cheese, grated
  • ¼ cup (30 g) Parmesan cheese, grated
  • Zest of ½ lemon
  • 1 teaspoon dried oregano (or your favorite herb)
  • 1 large sheet puff pastry
  • Salt and black pepper, to taste
  • 1 tablespoon milk or 1 egg (for egg wash)
  • Red pepper flakes, to taste (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). If using frozen puff pastry, thaw it at room temperature for about 30 minutes. If using refrigerated puff pastry, keep it stored in the refrigerator until ready to use.
  2. Prepare the asparagus: Wash and snap or trim about 1 inch (2.5 cm) off the woody ends. If needed cut the asparagus to about 8 inches in length or less (to fit the pastry).
  3. Grill the asparagus: Heat a grill pan or skillet over medium-high heat. Toss the asparagus with olive oil, salt, and black pepper. Grill for about 5 minutes, turning occasionally, until slightly tender and lightly charred. Remove from heat.
  4. Make the filling: In a small mixing bowl, combine crème fraîche, Gruyère cheese, lemon zest, oregano (or another herb of your choice), salt, and black pepper. Mix well until evenly combined.
  5. Prepare the puff pastry: If needed, roll out the puff pastry to 9 x 14 inches (23 x 36 cm) on a lined baking sheet. Lightly score a ½-inch (1 cm) border around the edges and prick the inside with a fork. Brush the edges of the pastry with milk or beaten egg.
  6. Assemble the tart: Spread the crème fraîche mixture evenly over the puff pastry, avoiding the edges. Arrange the grilled asparagus on top, placing some spears facing one direction and others in the opposite direction. Sprinkle the middle with Parmesan cheese and red pepper flakes, if using. Drizzle lightly with a tiny bit of olive oil.
  7. Bake in the preheated oven for 20-22 minutes, or until the pastry is deep golden and crisp.
  8. Garnish with extra lemon zest and Parmesan cheese. Cut into 6 squares or smaller wedges. Serve warm and enjoy!
