Perfect for spring and early summer, it makes a stunning centerpiece (especially if you tie it with a red or pink ribbon!) for occasions like Mother’s Day, when you want something that looks impressive but is surprisingly simple to make.

Ingredients that you will need

This recipe keeps things simple while delivering incredible flavor.

Fresh strawberries are the star, used both for the homemade coulis and layered throughout the cake for a juicy, vibrant bite. When it comes to the strawberries, they truly make all the difference—the cake will only be as sweet and flavorful as the berries you use, so choose ones that are ripe, juicy, and full of flavor.

The mascarpone cream is made with just a few ingredients—mascarpone, heavy whipping cream, powdered sugar, and vanilla—creating a light, smooth filling without the need for eggs or cooking.

Savoiardi, also known as Italian ladyfingers, are light and airy Italian sponge cookies that soften beautifully when layered; if you can’t find them, you can substitute with regular ladyfingers. Savoiardi cookies form the structure of the cake, giving it that classic Charlotte look while soaking up just enough flavor from the coulis to become soft and cake-like.

Tips for Making the Perfect Charlotte

This is a simple dessert, but a few tips will help you get that clean, bakery-style finish.

First, assemble the cake directly on your serving plate if possible. Once set, it’s a delicate cake and can be tricky to move.

Trim the bottoms of the savoiardi cookies so they can stand straight and create a neat outer edge. You can also trim them shorter if you prefer a slightly less tall cake.

When it comes to soaking the cookies, less is more. You can lightly dip the outer layer in strawberry coulis or even a little milk, but be careful not to over-soak. The cookies should hold their shape and not become too soft or mushy. For a cleaner look (like I did!! ) you can even skip soaking the outer layer entirely and only lightly moisten the inner layers.

Line the cookies upright with the sugar-coated side facing outward for the best presentation. If they don’t stay in place, add some of the base layer of savoiardi on the bottom of the pan first—this helps anchor the outer cookies and keeps them from sliding.

The cream is intentionally simple and light. A combination of mascarpone and whipped cream creates a smooth, airy texture without eggs or cooking. It’s only lightly sweetened, so feel free to taste and adjust the sugar if you prefer a sweeter filling. Vanilla paste adds a beautiful flavor, but extract works just as well.

For layering, keep it even and balanced. Start with savoiardi on the bottom, drizzle with half of the strawberry coulis, add a layer of finely chopped strawberries, and then half of the mascarpone cream. Repeat with another layer of savoiardi, the remaining coulis, and the remaining cream.

Let the cake chill in the refrigerator for at least 2 to 3 hours so it can set properly and slice cleanly.

How to Decorate and Serve

Finish the cake just before serving for the freshest look. You can get creative here, but a simple decoration is often the most beautiful.

Pipe whipped cream around the edges and fill the center with sliced fresh strawberries. Keeping a few green tops adds a natural pop of color, or you can add a few mint leaves for a fresh touch.

My biggest recommendation is to decorate right before serving, or up to an hour in advance, so the strawberries stay vibrant.

To serve, carefully remove the outer mold. You can wrap a ribbon around the cake for an extra elegant finish. Look how pretty it is!!

Slice between the savoiardi cookies for clean portions—each slice is typically about two or three cookies wide. Avoid cutting through a cookie lengthwise, as they are delicate and can break unevenly.

Store the cake covered in the refrigerator for up to 2 days. Keep in mind that the cookies will continue to soften as it sits, so it’s best enjoyed within the first day for the ideal texture.

Ingredients

 For the Strawberry Sauce (Coulis)

  • 12 oz (350 g) fresh strawberries, cut into small cubes
  • 1/4 cup (60 ml) fresh lemon juice
  • 1 tbsp powdered sugar

For the Mascarpone Cream

  • 16 oz (450 g) mascarpone
  • 1 tsp vanilla paste
  • 1/2 cup (50 g) powdered sugar
  • 12 oz (340 ml) heavy whipping cream, cold

 For the Cake Layers

  • About 36 savoiardi cookies (300 g)
  • 8 oz (225 g) fresh strawberries, chopped

For the Top

  • About 12 oz (350 g) fresh strawberries
  • 4 oz (125 ml) whipping cream
  • 1 tbsp powdered sugar

Instructions

  1. Make the strawberry coulis by placing the chopped strawberries, lemon juice, and powdered sugar in a small saucepan. Heat until it reaches a slight boil, stirring and cook for about 5 minutes.  Remove from heat , puree and let cool completely.
  2. Make the mascarpone cream by adding mascarpone, powdered sugar, and vanilla to a large mixing  bowl. Mix until smooth, then add the cold whipping cream and whip until thick and creamy. Do not overmix. Divide the cream into two piping bags.
  3. Prepare an 8-inch (20 cm) springform pan. Remove the bottom and place the side on a serving plate. Trim the savoiardi cookies to make one side flat and line the sides of the pan with cookies stating upright and sugar-side facing out. Add a layer of savoiardi cookies to the bottom of the pan. Cut in pieces if needed, and fill the gaps with the cut-out pieces of savoiardi.
  4.  Spread half of the strawberry coulis over the cookies, then pipe half of the mascarpone cream on top. Level and  sprinkle with chopped  fresh strawberries.
  5. Repeat with another layer of savoiardi cookies, the remaining coulis, and the remaining mascarpone cream. Don’t decorate the top yet. Refrigerate for at least 2 hours to set, or until ready to serve.
  6. Before serving, whip the cream with powdered sugar until soft peaks form. Pipe the whipped cream around the edges of the cake. Place quartered strawberries in the center, and optionally add a few strawberry halves with green tops for color. Serve sliced, cutting between 2 (small slice) or 3 (large slice) of  savoiardi per portion. Enjoy!
