- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Peel and slice the sweet potatoes into ½-inch-thick rounds. Place in a bowl and toss with olive oil, honey, paprika, salt, and pepper. Arrange in a single layer on the baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until golden, caramelized, and tender.
- In a small bowl, mix Greek yogurt with lemon or lime zest and juice. Add a pinch of salt and adjust acidity to taste.
