Make your Christmas extra-special with this soft, buttery, and airy Italian Pandoro A must-have Italian sweet bread!
Pandoro, with its golden exterior, delicate aroma, and rich history, is a dessert that has become a symbol of festive indulgence. Just like panettone, pandoro is more of a sweet bread than a dessert/cake, but you can serve it at any time of the day.Â
Originating in Verona, Italy, the word “Pandoro” translates to “golden bread,” (pan d’oro) a fitting name for a dessert that radiates warmth and splendor. The recipe has evolved over the years, but the commitment to quality ingredients and artisanal craftsmanship has remained constant.
The iconic star shape mold gives Pandoro its signature appearance, resembling a Christmas tree when dusted with powdered sugar. Each step of the process is a testament to the dedication to preserving tradition and delivering an authentic taste of Italy

Ingredients
- 1/2 cup (60g) bread flour
- 1/4 teaspoon (1 gr) active dry yeast
- 3 tablespoons (45 ml) water at room temperature
- 1 cup (120g) bread flour
- 1/4 cup (50g) sugar
- 1/2 teaspoon (2 gr) active dry yeast
- 2 large eggs, room temperature
- 2 cups (240g) bread flour
- 1/2 cup (100g) sugar
- 3 tablespoons (45 ml) water, room temperature
- 1 tablespoon vanilla extract
- 2 large eggs, room temperature
- 6 oz (170g) unsalted butter, softened
- 1 teaspoon (6g) salt
- powdered sugar to decorate
Instructions
- To make the biga: in a small bowl add the bread flour, dry yeast, and water, and mix with a fork until it comes together. Just mix until combined, it doesn’t have to be smooth. Cover the bowl with plastic wrap and let the biga rest for at least 1 hour.
- First Dough: Transfer the biga into the bowl of a stand mixer fitted with the dough hook attachment. Add bread flour, sugar, dry yeast, and two eggs lightly beaten. Mix at low speed for at least 10 minutes until the dough is smooth and wraps around the paddle. Scrap the side of the bowl, collect the dough in the middle, cover the bowl with plastic wrap, and let rise at room temperature for at least 2 hours or until doubled in size. Refrigerate for at least 12 hours.
- Remove the butter from the fridge, cut it into cubes, and let stand at room temperature to soften. Remove the dough from the refrigerator and let it sit at room temperature for one hour.
- Second dough: To the prepared dough, add the bread flour, sugar, and water. Mix at low speed until the water is absorbed. Beat the eggs lightly, and add to the dough while mixing. Add the salt and vanilla extract, and mix for one more minute. Turn off the mixer and let the dough rest for 5 minutes. Mix for 10 more minutes and rest for 5 more minutes. Add the butter one piece at a time. Add the next piece only once the first is incorporated. Mix for ten more minutes. Let rest for 5 minutes.
- Grease the pandoro mold (1 kg size) with spray or butter and flour.
- Turn the dough onto the clean counter (no flour), and with your wet or lightly oily hands fold the dough onto itself several times (slap and fold method). Let the dough stand on the counter for five minutes. Made a few more folds. Place the dough in the prepared pandoro mold. Cover with plastic wrap and let rise until the dough reaches the top of the mold, sometime between 4 to 6 hours in the oven (turned off) with the light on.
- Preheat the oven to 350F (175C). Bake the pandoro in the lower part of the oven for 20 minutes. Cover loosely with aluminum foil if the top is already golden brown and might get too dark. Place a thermometer in the center part and continue baking until the inner temperature reaches 197F (92C). Baking time should be around 40 to 50 minutes in total.
- Remove from the one and let it cool down for 30 minutes. Transfer to a cooling rack. Sprinkle heavily with powdered sugar before serving.
