What happens when two irresistible Italian favorite desserts come together into one amazing cup? You get this dreamy Crème Brûlée Tiramisu!

Imagine layers of espresso-soaked Italian ladyfingers and silky vanilla crème brûlée mascarpone custard, all finished with a thin, golden, crackly caramelized sugar crust. It’s everything you love about classic tiramisù, with the added magic of crème brûlée. And that first spoonful, breaking through the crunchy caramel into the creamy layers underneath? As I said … absolutely irresistible!

Why You’ll Love This Recipe

  • Two desserts in one: All the delicious flavors of classic Italian tiramisù meet the rich, delicate sweetness of crème brûlée.
  • Silky mascarpone custard: Instead of traditional tiramisù cream, we’re making a luscious vanilla custard thickened with egg yolks and cornstarch, then blended with mascarpone for an extra creamy texture.
  • That irresistible crack! A thin layer of caramelized sugar creates the signature crunchy crème brûlée topping.
  • Perfect individual portions: Served in little ramekins, these desserts look beautiful and feel extra special.
  • Make-ahead friendly: Prepare and assemble the desserts ahead of time, then brûlée the tops just before serving.

Cooking Tips for the Perfect Crème Brûlée Tiramisu

  • Temper the egg yolks: Slowly pour the warm cream into the egg yolk mixture while whisking constantly. This gently warms the yolks and prevents them from scrambling.
  • Cook the custard gently: Keep the heat low to medium-low and stir constantly until the custard thickens. Avoid letting it boil, as this can affect its smooth texture.
  • Strain the custard: For an extra silky consistency, pass the cooked custard through a fine-mesh sieve before adding the vanilla paste.
  • Cool completely before adding mascarpone: Make sure the custard is thoroughly chilled before incorporating the mascarpone. This helps create a smooth, creamy filling.
  • Don’t oversoak the ladyfingers: Quickly dip the Savoiardi into the cooled espresso. They should be moistened but not soggy. They’ll continue absorbing moisture as the dessert chills.
  • Allow enough chilling time: Refrigerate the assembled tiramisù for at least 4 hours, preferably overnight. This gives the layers time to set and the flavors to come together.

How to Get the Perfect Brûlée Topping

The caramelized sugar crust is what makes this dessert extra special!

  1. Start with a cold dessert: Take the ramekins straight from the refrigerator just before brûléeing.
  2. Use a thin, even layer of sugar: Sprinkle a little granulated sugar over the entire surface. You want just enough to cover the cream without creating a thick layer.
  3. Torch evenly: Hold your kitchen torch a few inches above the surface and keep it moving. The sugar will begin to melt, bubble, and turn golden amber.
  4. Let it harden: Allow the caramel to sit for 1–2 minutes until it becomes crisp and glass-like.
  5. Serve right away: The longer the caramel sits, especially in the refrigerator, the more moisture it absorbs and the softer it becomes.

What If My Brûlée Topping Isn’t Working?

  • The sugar isn’t melting: Make sure your torch is working properly and that you’re holding it close enough to the sugar. Keep the flame moving slowly across the surface.
  • The sugar is burning: Your torch may be too close, or you’re holding it in one spot for too long. Move the flame continuously and aim for a beautiful golden-amber color.
  • The caramel isn’t hardening: You may have added too much sugar, or the sugar may not have been caramelized enough. Use a thin, even layer and make sure all the crystals have melted.
  • The top is uneven: Sprinkle the sugar evenly, filling any bare spots before torching. A small fine-mesh sieve can help distribute it more uniformly.

A little reminder: Use shallow, heat-safe ceramic ramekins for torching. If you prefer serving these in glass containers, make sure they are specifically rated as torch-safe. Not all glass containers can withstand the direct heat of a kitchen torch.

Storage and Make-Ahead Instructions

Refrigerator: Store the assembled tiramisù, without the brûlée topping, covered in the refrigerator for up to 2–3 days.

Make ahead: You can prepare the custard and assemble the individual desserts a day ahead. In fact, I recommend it! The resting time allows the ladyfingers to soften and the flavors to meld beautifully.

Brûlée topping: Always caramelize the sugar just before serving. Once refrigerated, the crunchy caramel layer will absorb moisture from the custard and eventually become soft.

Freezing: I don’t recommend freezing this dessert. The mascarpone custard can change texture when thawed, and you’ll lose that lovely creamy consistency.

How to Serve

Serve these individual Crème Brûlée Tiramisu ramekins immediately after caramelizing the sugar. Bring them straight to the table while the tops are still crisp.

Give everyone a spoon and let them crack through that beautiful golden caramel crust to discover the creamy vanilla mascarpone custard and espresso-soaked ladyfingers underneath.

A little espresso alongside is always a good idea!

Buon appetito!

Ingredients

  • 1 cup (240 ml) heavy cream, warm
  • 4 large egg yolks
  • 1/4 cup (50 g) granulated sugar plus 2 tablespoons for the top
  • 1/2 tablespoon (5 g) cornstarch
  • 1 teaspoon vanilla paste
  • 8 oz (225 g) mascarpone cheese
  • Pinch of salt
  • 1 cup (240 ml) strong espresso or coffee, cooled
  • 12 to 18 savoiardi (Italian ladyfingers)

Instructions

  1. In a small saucepan, heat the heavy cream over medium heat (or in the microwave) until steaming but not boiling. Remove from the heat.
  2. In a separate saucepan, whisk together the egg yolks, 1/4 cup of sugar, and the cornstarch until smooth and well combined. Slowly pour the hot cream into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling. Return the saucepan to low to medium-low heat. Cook, stirring constantly with a whisk or silicone spatula, until the custard thickens, about 5–7 minutes. Do not let it boil.
  3. Strain the custard through a fine-mesh sieve into a clean bowl if needed. Whisk in the vanilla paste until fully incorporated. Press plastic wrap directly against the surface to prevent a skin from forming. Let cool slightly, then refrigerate for at least 1 hour, or until completely cold.
  4. In a medium bowl, whisk the mascarpone to soften. Gradually incorporate the chilled custard, mixing until smooth and fully combined.
  5. Break the savoiardi into pieces that fit your individual ramekins or small glass containers. Quickly dip each piece into the cooled espresso, just long enough to soften them without making them soggy. Arrange a layer of coffee-soaked savoiardi in the bottom of each ramekin. Add a layer of the chilled cream, spreading it evenly. Add another layer of espresso-soaked Savoiardi, followed by a final layer of custard.
  6. Smooth the tops with the back of a spoon or a small offset spatula. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the layers to set and the flavors to meld.
  7. Just before serving, sprinkle a thin, even layer of granulated sugar over the surface of each dessert. Using a kitchen torch, caramelize the sugar until golden and bubbling, creating a crisp, glass-like caramel crust. Keep the flame moving to avoid burning the sugar. Let sit for 1–2 minutes to allow the caramel to harden.
  8. Serve immediately and enjoy that irresistible crack of caramelized sugar with every spoonful!
