Ingredients
Pastry
- 1 sheet puff pastry, thawed if frozen
- 10 oz (280g) mixed berries (strawberries, blueberries…)
- 2 tablespoons lemon juice
- 1 tablespoon (10 g) cornstarch
- 1 tablespoon (12 g) sugar
- 1 or 2 tablespoons water, if needed
Vanilla Custard
- 2/3 cup (150ml) milk
- 2 tablespoons (25g) sugar
- 2 large egg yolks (reserve the egg whites for brushing)
- 1 tablespoon (10 g) cornstarch
- 1 teaspoon vanilla paste (or extract)
Topping
- 1 reserved egg white + 1 teaspoon milk, for brushing
- 4 tablespoons sliced almonds
- 1 tablespoon sparkling sugar (optional)
- Powdered sugar, for dusting
Instructions
- Make the berry filling: In a small saucepan, combine the mixed berries, lemon juice, sugar, and cornstarch. If using strawberries, cut them into small pieces first. Toss everything together and place over medium-low heat. Add 1 tablespoon of water if needed. Bring to a gentle simmer and cook for about 5 minutes, or until the berries are softened and the juices have slightly thickened. Do not overcook—you want the berries to hold their shape rather than turn into jam. Transfer to a small bowl and let cool completely.
- Make the vanilla custard: Heat the milk in a small saucepan or microwave until hot but not boiling. In a small saucepan, whisk together the egg yolks, sugar, and cornstarch until smooth. Slowly pour the hot milk into the egg mixture while whisking constantly.Cook over medium heat, whisking continuously, until thickened. Remove from the heat and stir in the vanilla paste. Transfer to a bowl, cover directly with plastic wrap to prevent a skin from forming, and let cool completely.
- Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

Lightly roll out the puff pastry and place it on the prepared baking sheet. Spread the cooled custard down the center of the pastry, leaving a border at the top and bottom. Spoon the cooled berry mixture evenly over the custard. Using a sharp knife, cut strips about 2–3 cm (1 inch) wide along both long sides of the pastry. Fold the strips alternately over the filling to create a braided pattern, then tuck the ends underneath.
