The brownie layer starts with butter and dark chocolate melted together for a smooth, glossy base. Ingredients
For the Espresso Brownie Base
- 4 oz (115 g) unsalted butter
- 7 oz (200 g) dark chocolate, coarsely chopped
- 1 tablespoon espresso powder
- 1/4 cup (30 g) unsweetened cocoa powder
- 3/4 cup (150 g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (65 g) all-purpose flour
- 1/4 teaspoon sea salt
For the Mascarpone Cream Topping
- 8 oz (225 g) mascarpone cheese, cold
- 1 cup (240 ml) heavy cream, cold
- 1/4 cup (50 g) granulated sugar
- 1 teaspoon vanilla paste (or extract)
- Unsweetened cocoa powder, for dusting
Instructions
- Make the brownie base: Preheat your oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving a bit of overhang on the sides for easy removal.
- In a medium saucepan, melt the butter over low heat. Remove from heat and add the chopped dark chocolate, stirring until melted and smooth. Whisk in the cocoa powder and espresso powder until fully combined. Set aside to cool slightly.
- In a large bowl, whisk together the sugar, eggs, and vanilla until pale. Slowly pour in the melted chocolate mixture, whisking constantly until smooth. Add the salt and sifted flour, folding gently until just combined. Pour the batter into the prepared pan and smooth the top.
- Bake at 350°F (175°C) for 20–22 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely, then transfer to the refrigerator while you prepare the mascarpone cream.
- Make the mascarpone cream: In a large mixing bowl, combine the mascarpone cheese, sugar, and vanilla paste. Mix briefly to combine.
- Gradually add the heavy cream while mixing on low speed, then increase to high speed and beat until the mixture thickens and holds stiff peaks (about 1–2 minutes). Do not overtax.
- Assemble and Chill: Spread the mascarpone cream evenly over the cooled brownie layer. Use a spatula to smooth the top. Refrigerate for at least 1 hour, or until set. Use the parchment paper to lift the brownie out of the pan. Place on a cutting board, dust well with cocoa powder, and slice into 9 medium or 18 small squares.
