Ingredients

  • Half a baguette, sliced open
  • 2 tablespoons Eggplant Pâté
  • A small handful of fresh arugula
  • 1 ball burrata cheese, drained and torn
  • 1 teaspoon Hot Chili Pepper Spread
  • 1 tablespoon crushed pistachios
  • Extra Virgin Olive Oil, for drizzling
  • Salt & freshly ground black pepper, to taste

Instructions

  1. Drizzle the inside of the baguette with a little olive oil and lightly toast until warm and crisp.
  2. Spread the Colavita Eggplant Pâté on the bottom half of the bread.
  3. Add a generous handful of arugula on top.
  4. Place the torn burrata over the arugula.
  5. Season lightly with salt and black pepper.
  6. Drizzle the Colavita Hot Chili Pepper Spread over the burrata.
  7. Sprinkle with crushed pistachios. Drizzle with Colavita EVOO, if desired.
  8. Gently press the top half of the baguette down and serve warm or at room temperature.
