Ingredients
- 1 cup (160 g) chocolate chips
- 1 cup (250 ml) heavy whipping cream
- 1/2 cup (50 g) powdered sugar
- 1 teaspoon vanilla paste (or vanilla extract)
- 16 oz (450 g) mascarpone cheese
- about 24 savoiardi cookies (Italian ladyfingers)
- about 1 cup (250 ml) milk
- about 1 cup (85 gr) unsweetened shredded coconut
Instructions
- In a small heatproof bowl, melt the chocolate chips with 3 to 4 tablespoons of heavy cream (taken from the total amount). Microwave in short intervals or use a double boiler. Stir until smooth, then set aside to cool.
- In a large mixing bowl, whip the remaining heavy cream with a hand mixer until stiff peaks form. Add the powdered sugar and vanilla paste (or extract) and mix to combine. With the mixer on low speed, gradually add the mascarpone cheese, a little at a time, mixing until smooth and creamy.
- Transfer half of the mascarpone cream to a separate bowl. Gently fold in the cooled melted chocolate to half of the cream. Add a little at a time until fully incorporated and smooth.Refrigerate for at least half hour. Transfer both the vanilla and chocolate creams into separate piping bags.
- Pour the milk into a shallow bowl. Briefly dip each savoiardo cookie in the milk for 2 seconds on each side, then roll it in the shredded coconut, and place on a serving platter, creating a row of about 8 cookies. Pipe alternating dollops of vanilla and chocolate cream on top.
- Add a second layer of dipped cookies on top of the cream, followed by another layer of piped cream. Repeat with a third and final layer of dipped cookies if desired. Please note: You can keep each cream layer uniform (all vanilla or all chocolate), or alternate the creams and cookies as shown in the photo.
- Refrigerate the cake for at least 1 hour to set. Keep chilled until ready to serve.
