  • 4 oz (1/2 cup) unsalted butter, softened to room temperature
  • 3/4 cup (150 g) plus1 tablespoon sugar, divided
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups (200 g) all-purpose flour
  • 6 oz (170 g) full-fat sour cream
  • 1 cup fresh blueberries
  • 1 large peach or nectarine, diced

Instructions

  1. Preheat the oven to 375ºF (190ºC). Lightly grease and line an 8- or 9-inch round springform pan with cooking spray or butter. Set aside.
  2. In a large mixing bowl, beat the butter and 3/4 cup of sugar with a hand mixer until pale and fluffy. Add the eggs one at a time, mixing well after each addition. Beat in the vanilla extract, baking powder, and salt.
  3. Gradually mix in half of the flour, then stir in the sour cream. Add the remaining flour and mix just until combined—do not overmix.
  4. Gently fold in the blueberries and diced peach using a spatula. Pour the batter into the prepared pan and smooth the top. If desired, sprinkle additional blueberries and the remaining 1 tablespoon of sugar over the top.
  5. Bake at 375ºF (190ºC) for about 40 minutes, or until the top is lightly browned and a toothpick inserted in the center comes out with a few moist crumbs.
  6. Let the cake cool completely in the pan. Once cool, remove the sides of the springform pan and serve.
