Today I present you the classic recipe for madeleines – the delightful little butter cakes from Lorraine, France! These mini cakes are famous for their pretty shell shape and yummy buttery flavor. The best part? They’re super easy to make and quick to bake.

 

Imagine: crispy edges, buttery soft inside, and just the right amount of sweetness. They’re so delicious, you won’t believe you made them at home. 

Madeleines are light, airy, and have a texture similar to pound cake, with crispy edges that are just perfect. 

You only need basic ingredients to make them, and a special madeleine pan (here is mine!). 

But for best results,  you do need to pay attention to the details. So please make sure to follow my easy recipe, and no skipping steps!

Often thought as cookies, madeleines are perfect with just a sprinkle of powdered sugar on top. If you want to get fancy, dip them in dark chocolate. Yum!

How to store:

Madeleines are best when eaten fresh from the oven. They can be stored for a day, but they might lose their wonderful texture if you keep them too long. Also, it’s better not to freeze them as they dry out quickly.

Ingredients

  • 5 oz (140 g) unsalted butter, melted
  • 2 large eggs
  • 1/2 cup (100 g) sugar
  • 3 tablespoons (45 g) brown sugar
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 1 1/4 cup (150 g) all-purpose flour
  • powdered sugar for sprinkling on top

Instructions

  1. Preheat the oven to 375° F (190° C). Grease the madeleine pan with butter or spray. Set aside.
  2. In a small bowl or pan, melt the butter it in the microwave or on the stovetop and transfer to a bowl. Set aside to cool.
  3. In a large mixing bowl, add the eggs, sugar, brown sugar, vanilla extract, and salt. Whisk well until light and fluffy. Sift the flour into the batter, and gently fold to combine using a spatula.
  4. Pour some of the melted butter around the edge of the bowl, and fold into the batter some at a time until the ingredients are thoroughly combined. The batter will be thick and shiny. Be careful not to over-mix.
  5. Spoon the batter into the prepared madeleine pan. Make 24.
  6. Bake in the middle of the oven at 375° F (190° C), for 9 minutes or until the madeleines are light golden brown at the edge, firm to the touch. Remove the madeleines from the pan and place shell-side up on a cooling rack lined with parchment paper.
  7. Sprinkle with powdered sugar if you like, or dip into melted chocolate before serving
