  • 1 puff pastry sheet (about 357 g), rolled out to 9 x 15 inches
  • 1 to 2 tablespoons sugar
  • 16 oz (450 g) full-fat ricotta cheese, well drained
  • 2 tablespoons honey
  • 1 teaspoon vanilla paste (or extract)
  • 1/2 cup (120 ml) heavy whipping cream
  • 1/2 cup (80 g) mini chocolate chips
  • Powdered sugar, for dusting

Instructions

  1. Place the ricotta in a fine sieve set over a small bowl. Let it drain for at least 30 minutes, or longer if possible, to remove excess moisture.
  2. Preheat the oven to 375°F (190°C). Unroll the puff pastry onto a baking sheet lined with parchment paper. Prick it all over with a fork, right up to the edges. Sprinkle evenly with 1–2 tablespoons of sugar. Cover the pastry with another sheet of parchment paper and place a second baking sheet on top (to keep it flat while baking). Bake for 20 minutes, then remove the top pan and parchment paper and bake uncovered for 5 more minutes, or until lightly golden on top. Let the pastry cool completely.
  3. Once the pastry is cooling, prepare the ricotta cream. In a medium bowl, combine the drained ricotta, honey, and vanilla. Using an electric mixer, beat until smooth and creamy. Gradually pour in the cold heavy cream and continue whipping until the mixture is thick and holds soft peaks. Gently fold in the mini chocolate chips with a spatula. Refrigerate the cream until ready to use.
  4. Using a sharp knife, cut the baked puff pastry into three equal pieces (about 5 x 9 inches each). Pipe half of the ricotta cream over one pastry layer. Top with another pastry layer, and repeat with another layer of cream. Finish with the last pastry sheet on top.Dust generously with powdered sugar.
