Here is one of my favorite, easy, and quick dinner recipes, that’s perfect for these chilly autumn nights. 
It's scrumptious and wholesome. It's creamy and full of flavor. It's sure to fill your stomach and warm your soul. 
This recipe has short pasta mingled in a dense and creamy chickpea soup, exploding with bits of sautéed onion, celery, carrots, and garlic. It also has a touch of rosemary and oregano and a sprinkle of freshly grated Parmesan cheese. 
What more could you ask for?!?

        Creamy Raspberry Chia Pudding

        Here is an easy, super-healthy and delicious, versatile and nutritious  creamy chia pudding filled with fresh raspberry and Greek yogurt


        My latest addiction!! This raspberry chia seed pudding is a perfectly creamy and delicious breakfast, snack or quick pick-me-up for when the craving hits you

        This effortless, protein-packed snack combines the goodness of chia seeds, milk, and a touch of maple syrup (or your favorite sweetener) AND naturally sweet and vibrant fresh raspberries mixed with Greek yogurt.  
        Not only is it easy to make, but it also offers a wide range of health benefits. 

        Raspberry chia pudding is a versatile and nutritious treat that satisfies both your taste buds and dietary preferences. Made with your favorite  milk (regular or almond) and maple syrup, it's gluten-free, low-carb, and great option for paleo diets. 

        The Magic of Chia Seeds: 

        Chia seeds are tiny powerhouses of nutrition. If you haven't made chia pudding before,  you should know that when combined with liquid, these tiny seeds naturally form a gel-like consistency, making them perfect for creating a pudding-like texture. This unique property not only enhances the taste and texture but also provides a host of health benefits. 

        Health Benefits of Chia Seeds: 

        Chia seeds have gained great popularity in recent years due to their numerous health benefits. Despite their small size, these seeds are packed with essential nutrients. 
        They are an excellent source of fiber, protein, omega-3 fatty acids, and antioxidants. Also, adding chia seeds into your diet can promote digestion, support heart health, and aid in weight management.

        The Raspberry Twist: 

        Raspberries, with their vibrant color and sweet-tart flavor, are an ideal companion to chia seed pudding. Adding raspberries not only elevates the taste but also introduces a range of additional health benefits. Raspberries are packed with vitamins, minerals, and antioxidants, making them a nutritious choice for any meal.


        Here are some things to keep in mind:

        Promotes Satiety: Due to the high fiber content in chia seeds, this raspberry pudding can help you feel fuller for longer. This can be especially beneficial when consumed as a breakfast option or as a midday snack, preventing unnecessary cravings and overeating.

        And last but not least 
        Energy Boost: Chia seeds are known for their slow-releasing energy properties, making raspberry chia pudding an ideal choice when you need a sustained energy boost. This can be particularly advantageous for individuals leading active lifestyles or those seeking an alternative to sugary snacks



        This pudding is not only healthy but also kid-friendly, making it a great choice for the whole family. Both my boys love it!

        You can customize it by adding some sliced almonds like I did. Or you could also addcocoa powder, fruit jam, Nutella, or peanut butter to suit your children's preferences. 

        TIPS: 


        Use fresh chia seeds: the only way to ensure the seed will plump up in the milk and turn into pudding consistency. And use real vanilla extract instead of artifiacl for the best flavor. 
        You can use regular (cow) milk, or your favorite: coconut, almond, cashew...

        Mix up in the evening and refrigerate overnight for the best texture.

        Make sure to stir it well before placing in the fridge. The goal is mix until there are no clumps. So my suggestion is to mix and wait 5 to 10 minutes and mix again before placing in the fridge. 

        Store in an airtight  container in the fridge for up to 4 days.
